🧁 Cream Cheese Muffins (Soft & Creamy)

📝 Ingredients
For the Muffin Batter
- 1½ cups all-purpose flour
- ½ cup sugar
- 1½ tsp baking powder
- ¼ tsp salt
- 1 egg
- ½ cup milk
- ¼ cup vegetable oil or melted butter
- 1 tsp vanilla extract
For the Cream Cheese Filling
- 200 g cream cheese (softened)
- ¼ cup sugar
- 1 tsp vanilla extract
👩🍳 Instructions
- Preheat oven
- Heat oven to 180°C (350°F).
- Line a muffin tray with paper liners.
- Prepare cream cheese filling
- In a bowl, mix cream cheese, sugar, and vanilla until smooth.
- Set aside.
- Make the muffin batter
- In a bowl, whisk flour, sugar, baking powder, and salt.
- In another bowl, mix egg, milk, oil, and vanilla.
- Combine wet and dry ingredients and mix until just combined (do not overmix).
- Fill the muffin cups
- Add 1 tablespoon batter into each cup.
- Add 1 teaspoon cream cheese mixture in the center.
- Cover with another tablespoon of batter.
- Bake
- Bake for 18–22 minutes until the tops are golden and a toothpick comes out clean.
- Cool
- Let muffins cool for about 10 minutes, then serve.
