Instructions
1. Make the cookie dough
- Preheat oven to 350°F (175°C).
- In a bowl, cream butter and sugar until smooth.
- Mix in vanilla and milk.
- Add flour and salt, mixing until a dough forms.
2. Shape the cookies
- Roll dough to about ¼ inch thick.
- Cut into round cookies and cut a small hole in the center (donut shape).
- Place on a lined baking sheet.
3. Bake
Bake for 10–12 minutes until lightly golden.
Let cookies cool completely.
4. Toast the coconut
Spread coconut on a baking sheet and bake at 350°F (175°C) for 5–8 minutes, stirring until golden.
5. Make the caramel topping
In a saucepan or microwave, melt caramels with 3 tbsp milk, stirring until smooth.
Mix the toasted coconut into the caramel.
6. Assemble
- Spread a thin layer of caramel on each cookie.
- Add the caramel–coconut mixture on top.
7. Add chocolate
- Melt the chocolate chips.
- Dip the bottom of each cookie in chocolate and place on parchment paper.
- Drizzle chocolate over the top.
Let the cookies set until the chocolate hardens.
