🧀 Cheesy Mashed Potato Puffs
These are crispy on the outside, fluffy and cheesy on the inside — perfect for using up leftover mashed potatoes.
🥔 Ingredients
- 3 cups cold mashed potatoes
- 1 cup shredded cheddar (or your favorite cheese)
- 2 eggs
- ¼ cup grated Parmesan
- 2 tablespoons melted butter
- 2 tablespoons chopped chives or green onions (optional)
- Salt & pepper to taste
👩🍳 Instructions
- Preheat oven to 400°F (200°C). Grease a mini muffin tin well.
- In a bowl, mix mashed potatoes, cheddar, eggs, Parmesan, butter, and seasonings.
- Spoon mixture into muffin cups, filling to the top.
- Bake 20–25 minutes until golden and slightly crispy on top.
- Let cool 5 minutes before removing.

Sprinkle a little extra cheese on top before baking for a golden crust.
