1. Make the mashed potatoes
- Boil potatoes in salted water until tender (about 15 minutes).
- Drain, mash, and mix in butter, milk/cream, salt, and pepper.
- Add cheese or egg yolk if using.
- Set aside.
2. Make the meat filling
- Heat butter/oil in a skillet over medium heat.
- Add onion and carrots; cook until softened (5–6 minutes).
- Add garlic; cook 30 seconds.
- Add ground lamb and cook until browned, breaking it up.
- Stir in tomato paste and flour; cook 1 minute.
- Add Worcestershire, thyme, rosemary, broth, salt, and pepper.
- Simmer 5–10 minutes until thickened.
- Stir in peas last.
3. Assemble
- Spread the meat mixture evenly in a baking dish (8×8 or 9×13 depending on thickness).
- Spoon mashed potatoes over the top and smooth.
- Use a fork to create ridges (they brown beautifully).
4. Bake
Bake at 400°F (200°C) for 20–25 minutes, or until:
