💍🍗 Marry Me Chicken Soup

Ingredients (4–6 servings)

  • 1 tbsp olive oil or butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 lb (450 g) chicken breast or thighs, diced
  • Salt & black pepper
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp red pepper flakes (optional)
  • ½ cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 cup pasta (or rice)
  • 2 cups fresh spinach
  • Fresh basil or parsley

Instructions

1️⃣ Sauté the base

  • Heat oil in a pot over medium heat.
  • Cook onion 3–4 minutes until soft.
  • Add garlic, cook 30 seconds.

2️⃣ Cook chicken

  • Add chicken, season with salt, pepper, Italian seasoning, paprika, and chili flakes.
  • Cook until lightly golden.

3️⃣ Build the soup

  • Stir in sun-dried tomatoes.
  • Pour in broth and bring to a simmer.
  • Add pasta and cook until tender (10–12 min).

4️⃣ Make it creamy

  • Lower heat.
  • Stir in cream and Parmesan until smooth.

5️⃣ Finish

  • Add spinach and herbs.
  • Simmer 2–3 minutes until wilted.

  • Crusty bread or garlic knots
  • Side salad
  • Extra Parmesan on top 😌
