Microwave Blueberry Protein Pancake Bowl

Ingredients

  • ½ cup rolled oats (or oat flour)
  • ½ cup egg whites or 1 whole egg + 2 tbsp milk
  • 1 scoop vanilla protein powder
  • ¼ tsp baking powder
  • Pinch of salt
  • ¼ tsp cinnamon (optional)
  • ¼ cup blueberries (fresh or frozen)
  • Sweetener to taste (optional)

Instructions

  1. Blend or mix
    • Blend oats into flour (or use oat flour).
    • Mix all ingredients except blueberries until smooth.
  2. Fold in blueberries.
  3. Pour into a microwave-safe bowl (lightly greased).
  4. Microwave on HIGH 1½–2½ minutes.
    • Check at 1½ minutes; cook in 20-second bursts until set.
  5. Let rest 30 seconds (it finishes cooking).

Topping Ideas

  • Greek yogurt or skyr
  • Extra blueberries
  • Peanut butter or almond butter
  • Sugar-free syrup or honey

Tips for Best Results

  • Bowl should be at least 2× the batter volume (it rises).
  • If using whey protein, add 1–2 tbsp extra milk for moisture.
  • Frozen blueberries may add 10–20 seconds cook time.
