Amish Snow Day Soup Recipe

Ingredients (serves 6–8)

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 3 cups carrots, sliced
  • 2 cups celery, sliced
  • 4 cups chicken or beef broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and black pepper, to taste

Instructions

  1. Cook the beef
    • In a large pot or Dutch oven, brown the ground beef with the onion and garlic over medium heat.
    • Drain excess grease.
  2. Add vegetables
    • Stir in potatoes, carrots, celery, and broth.
    • Bring to a boil, then reduce heat and simmer for 15–20 minutes, until vegetables are tender.
  3. Make it creamy
    • In a small saucepan, melt butter.
    • Whisk in flour and cook 1 minute.
    • Slowly whisk in milk until smooth.
  4. Combine
    • Stir the milk mixture into the soup.
    • Simmer 5 minutes until slightly thickened.
  5. Add cheese & season
    • Stir in shredded cheddar until melted.
    • Season with salt and pepper to taste.
  6. Serve hot
    • Enjoy with homemade bread, biscuits, or crackers.

Tips & Variations

  • Substitute ground turkey for a lighter version
  • Add corn or peas for extra texture
  • Use evaporated milk instead of regular milk for extra richness
