Mediterranean Flatbread Pizza with Tzatziki Drizzle

Ingredients

Flatbread Base

  • 2–3 flatbreads or naan
  • 2 tbsp olive oil
  • ½ tsp garlic powder

Toppings

  • 1 cup shredded mozzarella or provolone
  • ½ cup crumbled feta cheese
  • ½ cup cherry tomatoes, halved
  • ¼ cup Kalamata olives, sliced
  • ¼ cup red onion, thinly sliced
  • ½ cup cooked chicken (optional)
  • 1 tsp dried oregano

Tzatziki Drizzle

  • ½ cup Greek yogurt
  • ¼ cup cucumber, finely grated & drained
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 small garlic clove, minced
  • Salt, to taste

Instructions


1. Preheat Oven

  • Preheat oven to 425°F (220°C).
  • Place flatbreads on a baking sheet.

2. Prep Flatbreads

  • Brush with olive oil and sprinkle with garlic powder.

3. Assemble Pizza

  1. Sprinkle mozzarella evenly over flatbreads.
  2. Add feta, tomatoes, olives, onion, and chicken (if using).
  3. Sprinkle oregano on top.

4. Bake

  • Bake 10–12 minutes, until cheese is melted and edges are golden.

5. Make Tzatziki

  • Mix all tzatziki ingredients until smooth.
  • Chill if time allows.

6. Finish & Serve

  • Drizzle tzatziki over warm flatbreads.
  • Slice and serve immediately.

  • Vegetarian: Add roasted red peppers or artichoke hearts
  • Spicy: Add red pepper flakes or harissa drizzle
  • Low-carb: Use low-carb flatbread
  • Extra fresh: Add arugula after baking
