Here’s a simple, classic potatoes and onions dish—great as a side or even a main 🍽️

Baked Potatoes and Onions

Ingredients

  • 3–4 potatoes (russet, Yukon gold, or red)
  • 1–2 onions (yellow or red)
  • 2–3 tbsp olive oil or butter
  • Salt & pepper
  • Optional: garlic powder, paprika, rosemary, thyme

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Prep:
    • Peel (optional) and slice potatoes into rounds or wedges.
    • Slice onions into thin strips or rings.
  3. Season:
    • Toss potatoes and onions with olive oil, salt, pepper, and any optional seasonings.
  4. Bake:
    • Spread evenly on a baking sheet (don’t overcrowd).
    • Cover with foil and bake 25 minutes.
    • Remove foil, stir, and bake another 20–25 minutes until potatoes are tender and edges are crispy.
  5. Serve hot.

Optional upgrades

  • Add sliced bell peppers
  • Sprinkle with cheese in the last 5 minutes
  • Finish with fresh parsley or chives
  • Add smoked sausage or bacon for a full meal
