cheesy mashed potato puffs

Here’s an easy, cheesy mashed potato puffs recipe—crispy outside, fluffy inside 🧀🥔

Ingredients

  • 2 cups mashed potatoes (cold works best)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 large egg
  • 2–3 tbsp flour (or breadcrumbs)
  • 2 tbsp chopped green onions or chives (optional)
  • Salt & pepper to taste
  • Cooking spray or a little oil

Instructions

  1. Preheat oven to 400°F (205°C). Lightly grease a mini muffin tin.
  2. In a bowl, mix mashed potatoes, cheese, egg, flour, salt, pepper, and any add-ins.
  3. Spoon the mixture into the muffin tin, filling each cup.
  4. Lightly spray or brush the tops with oil.
  5. Bake 20–25 minutes until golden and puffed.
  6. Let cool for a few minutes, then pop them out.

Optional add-ins

  • Cooked bacon bits
  • Garlic powder or paprika
  • Parmesan on top for extra crispiness

Serving ideas

  • Dip in ketchup, ranch, sour cream, or cheese sauce
  • Great as a snack, side dish, or party food
