Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prep potatoes: Cut into evenly sized chunks (about 1–1½ inches).
  3. Combine: In a large bowl, toss potatoes and onions with melted butter, olive oil, and seasonings. Coat thoroughly.
  4. Arrange: Spread in a single layer on a greased or parchment-lined baking sheet. Avoid overcrowding.
  5. Bake: Roast for 45–60 minutes, flipping once halfway through.
    • They’re done when golden brown outside and fork-tender inside.
