🍄 Mushroom & Spinach Sauté (Serves 2–3)

Ingredients

  • 8 oz (225g) mushrooms (cremini or button), sliced
  • 3–4 cups fresh spinach
  • 2 cloves garlic, minced
  • 1–2 tbsp olive oil or butter
  • Salt & black pepper, to taste
  • Optional: red pepper flakes, splash of lemon juice, grated Parmesan

Instructions

  1. Heat oil or butter in a large skillet over medium heat.
  2. Sauté mushrooms first (don’t overcrowd). Cook 5–7 minutes until they release moisture and turn golden brown.
  3. Add garlic and cook 30 seconds until fragrant.
  4. Add spinach in batches, tossing until wilted (1–2 minutes).
  5. Season with salt & pepper. Finish with lemon juice or Parmesan if desired.

  • Let mushrooms brown undisturbed for better flavor.
  • A splash of soy sauce or balsamic adds depth.
