Fried Potatoes and Onions

Ingredients (Serves 4)

  • 4–5 russet or Yukon Gold potatoes, peeled (optional) and sliced
  • 1 large onion, sliced
  • 3–4 tablespoons oil or butter (or a mix of both)
  • Salt and pepper, to taste
  • Optional seasonings: paprika, garlic powder, or onion powder

Instructions

  1. Prep the potatoes
    • Slice potatoes evenly (about ¼-inch thick).
    • Optional: soak in cold water 15 minutes, then drain and pat dry (helps crisp them).
  2. Heat the pan
    • Heat oil/butter in a large skillet over medium heat.
  3. Cook the potatoes
    • Add potatoes in a single layer.
    • Cover and cook 8–10 minutes, stirring occasionally, until tender.
  4. Add onions
    • Add sliced onions, salt, pepper, and any seasonings.
    • Cook uncovered 8–12 minutes, stirring occasionally, until potatoes are golden and onions are caramelized.
  5. Serve
    • Taste and adjust seasoning. Serve hot.

  • 🥓 Cook in bacon grease for extra flavor
  • 🧄 Add fresh garlic in the last 2 minutes
  • 🧀 Sprinkle with shredded cheese at the end
