Hereβs an easy, cozy Crock Pot Chicken and Noodles recipe that basically cooks itself.
Crock Pot Chicken and Noodles
Ingredients
- 1Β½β2 lbs boneless, skinless chicken breasts or thighs
- 1 small onion, diced (optional but tasty)
- 2 cloves garlic, minced
- 3β4 cups chicken broth
- 1 tsp salt (adjust to taste)
- Β½ tsp black pepper
- 1 tsp poultry seasoning or Italian seasoning
- 1 can (10.5 oz) cream of chicken soup
- 8β12 oz egg noodles
- 2 tbsp butter (optional, but very good)
- Optional add-ins: carrots, celery, peas
Instructions
- Load the crock pot
Add chicken, onion, garlic, broth, salt, pepper, and seasoning. - Cook low & slow
- LOW: 6β7 hours
- HIGH: 3β4 hours
Chicken should be very tender.
- Shred the chicken
Take chicken out, shred with two forks, return it to the crock pot. - Make it creamy
Stir in cream of chicken soup and butter. - Add noodles π
Stir in egg noodles. Cover and cook on HIGH for 20β30 minutes, stirring once, until noodles are tender. - Final check
Add a splash more broth if needed. Taste and adjust seasoning.
Tips for extra goodness
- Thighs = juicier than breasts
- Too thick? Add warm broth or milk
- Want richer flavor? Finish with a splash of cream or sprinkle of parsley
