Here’s a simple, classic Corn Pudding recipe — creamy, slightly sweet, and perfect as a side dish for holidays or weeknight meals.


🌽 Classic Corn Pudding Recipe

Ingredients

  • 1 can (15 oz) whole kernel corn, drained

  • 1 can (15 oz) creamed corn

  • 1 cup sour cream

  • ½ cup (1 stick) melted butter

  • 2 large eggs

  • 1 box (8.5 oz) Jiffy corn muffin mix

  • ¼ cup sugar (optional — adds sweetness)

  • ½ tsp salt


Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Grease an 8×8 or 9×9 baking dish.

  3. In a large bowl, whisk the eggs, then stir in:

    • sour cream

    • melted butter

    • whole kernel corn

    • creamed corn

  4. Add the corn muffin mix, sugar, and salt. Stir until just combined.

  5. Pour into the prepared dish and smooth the top.

  6. Bake 45–55 minutes until the center is set and the top is lightly golden.

  7. Let cool 5–10 minutes before serving.


Optional Add-Ins

  • Cheesy version: add 1 cup shredded cheddar

  • Savory version: add chopped green onions or diced jalapeños

  • Smoky twist: add cooked crumbled bacon
