Broccoli Rice Chicken

Here’s a simple and comforting Broccoli Rice Chicken recipe 🍗🥦🍚—a one-pan meal that’s healthy and easy to make.


Ingredients (Serves 3–4)

  • 2 chicken breasts (or thighs), cut into bite-sized pieces
  • 2 cups broccoli florets
  • 1 cup uncooked rice (white or brown)
  • 2 cups chicken broth (or water with bouillon)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • ½ teaspoon paprika (optional)
  • ¼ cup grated Parmesan (optional, for topping)

Instructions

  1. Cook the chicken
    • Heat olive oil in a large skillet or sauté pan over medium heat.
    • Add chicken, season with salt, pepper, and paprika.
    • Cook 5–6 minutes until browned and mostly cooked through. Remove and set aside.
  2. Cook the aromatics
    • In the same pan, sauté onion and garlic for 2–3 minutes until soft.
  3. Add rice and liquid
    • Stir in uncooked rice to coat with oil and onions.
    • Pour in chicken broth and bring to a simmer.
  4. Add broccoli and chicken
    • Place broccoli florets and chicken on top of the rice.
    • Cover and simmer 15–20 minutes (for white rice) or until rice is tender and liquid is absorbed.
  5. Finish and serve
    • Fluff rice with a fork, mix chicken and broccoli together.
    • Sprinkle Parmesan on top if desired. Serve warm.

Tips & Variations

  • 🥦 Swap broccoli for cauliflower or mixed veggies.
  • 🧄 Add Italian seasoning or a dash of lemon juice for extra flavor.
  • 🥄 Use cheddar or mozzarella instead of Parmesan for a cheesy version.
  • 🍲 Make it creamy by stirring in ¼ cup cream or cream cheese at the end.
