Ingredients
- 4 chicken cutlets (thin-sliced breasts)

- 2 eggs

Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment or lightly grease it.
- Pat chicken dry and season lightly with salt & pepper.
- In one bowl: beat the eggs.
In another bowl: mix Parmesan, breadcrumbs, garlic powder, paprika, and any herbs. - Dip each cutlet in egg, then press into the Parmesan breadcrumb mix (really pack it on).
- Place on baking sheet. Drizzle or brush lightly with olive oil/butter for extra crisp.
- Bake 18–22 minutes, flipping halfway, until golden and cooked through (165°F).
