Mexican Beef Enchiladas

Here’s a classic Mexican Beef Enchiladas recipe—flavorful, hearty, and easy to make!


🌮 Mexican Beef Enchiladas Recipe

Ingredients

For the filling

  • 1 lb (450 g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika (optional)
  • ½ tsp oregano
  • Salt & pepper to taste
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 can (4 oz) chopped green chiles (optional)

For the sauce

  • 2 tbsp oil
  • 2 tbsp flour
  • 2 tbsp chili powder
  • 1 ½ cups chicken or beef broth
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin
  • Salt to taste
  • ½ cup tomato sauce (optional but adds richness)

To assemble

  • 8–10 corn or flour tortillas
  • Additional 1–2 cups shredded cheese
  • Fresh cilantro, sour cream, or sliced jalapeños (for topping)

⭐ Instructions

1. Make the enchilada sauce

  1. Heat oil in a saucepan over medium heat.
  2. Whisk in flour and chili powder; cook 30–60 seconds.
  3. Add broth, garlic powder, onion powder, cumin, salt, and tomato sauce.
  4. Simmer 5–7 minutes until slightly thickened.
  5. Adjust seasoning to taste.

2. Prepare the beef filling

  1. In a skillet, cook ground beef until browned.
  2. Add onions and cook until softened.
  3. Add garlic; cook 30 seconds.
  4. Stir in cumin, chili powder, smoked paprika, oregano, and a pinch of salt/pepper.
  5. Add green chiles if using.
  6. Remove from heat and stir in 1 cup cheese.

3. Assemble the enchiladas

  1. Preheat oven to 375°F (190°C).
  2. Lightly warm tortillas so they’re pliable.
  3. Spread a thin layer of enchilada sauce at the bottom of a baking dish.
  4. Fill each tortilla with beef mixture, roll tightly, and place seam-side down.
  5. Pour remaining sauce over the top.
  6. Sprinkle with plenty of shredded cheese.

4. Bake

Bake 20–25 minutes, until the cheese is bubbly and lightly golden.

  • Serve alongside Mexican rice, refried beans, or a fresh salad
