Here’s an easy, delicious Cherry Pie Bars recipe — soft, buttery crust + sweet cherry filling + tender crumble topping. Perfect for potlucks, holidays, or quick desserts!


🍒 Cherry Pie Bars

Serves: 12–16
Prep: 10 minutes
Bake: 30–35 minutes


Ingredients

For the Dough (Crust + Topping)

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract (optional but AMAZING with cherry)
  • 3 cups all-purpose flour
  • 1 tsp salt

For the Filling

  • 1 can (21 oz) cherry pie filling
    or 2 cans for extra-thick bars

🍰 Instructions

1. Preheat Oven

  • Preheat to 350°F (175°C).
  • Grease a 10×15 jelly roll pan or a 9×13 for thicker bars.

2. Make the Batter

  1. Cream together butter and sugar until light and fluffy (2–3 minutes).
  2. Add eggs one at a time, mixing well.
  3. Add vanilla + almond extract.
  4. Add flour and salt; mix until a thick batter forms.

3. Create the Layers

  1. Spread about ⅔ of the batter evenly into the prepared pan.
  2. Spoon the cherry pie filling over the top in an even layer.
  3. Drop remaining batter in spoonfuls over the cherries (it won’t cover completely — that’s perfect).

4. Bake

  • Bake 30–35 minutes or until lightly golden around the edges.
  • Cool completely before slicing into bars.

⭐ Optional Glaze

Whisk together:

  • 1 cup powdered sugar
  • 1–2 tbsp milk
  • ½ tsp vanilla or almond extract

Drizzle over cooled bars.


Variations

  • Mixed berry version: Use berry pie filling.
  • Cherry cheesecake bars: Add a thin layer of sweetened cream cheese under the cherry filling.
  • Crumble topping: Add ¼ cup oats + 2 tbsp brown sugar to the reserved batter.
