Garlic Herb Roasted Red Potatoes are crispy on the outside, fluffy inside, and packed with flavor—perfect as a side for almost any meal.


🥔 Ingredients

  • 500–700g red potatoes (washed, cut into halves or quarters)
  • 3–4 cloves garlic (minced)
  • 2–3 tbsp olive oil
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp dried oregano or thyme
  • 1 tsp dried rosemary (or mixed Italian herbs)
  • Optional: paprika or chili flakes for a little heat
  • Fresh parsley (chopped, for garnish)

🔥 Instructions

1. Preheat oven

  • Set to 200°C (400°F)

2. Prep the potatoes

  • Cut into even-sized pieces so they cook evenly
  • Pat dry (this helps them crisp up)

3. Season

  • In a bowl, toss potatoes with olive oil, garlic, salt, pepper, and herbs
  • Make sure everything is well coated

4. Roast

  • Spread on a baking tray in a single layer
  • Roast for 30–40 minutes, flipping halfway through

5. Finish

  • Once golden and crispy, remove from oven
  • Sprinkle fresh parsley and a pinch of salt if needed

  • Use high heat
  • For extra crispiness: soak cut potatoes in water 20 minutes, then dry well
