🍋 Ingredients

Crust & Crumb Topping

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/4 tsp salt

Lemon Filling

  • 4 large eggs
  • 1 1/2 cups sugar
  • 1/4 cup all-purpose flour
  • Zest of 2 lemons
  • 1/2 cup fresh lemon juice (about 2–3 lemons)

🥣 Instructions

1. Preheat & Prepare

  • Preheat oven to 350°F (175°C)
  • Line a 9×13-inch baking pan with parchment paper

2. Make Crust & Topping

  • Cream together butter and sugar until light
  • Stir in 2 cups flour + salt until mixture forms crumbs
  • Press half into the pan for the base; reserve the other half for topping

3. Bake Crust

  • Bake for 15–20 minutes, until lightly golden
  • Remove from oven and let slightly cool

4. Prepare Lemon Filling

  • Whisk eggs, sugar, 1/4 cup flour, lemon zest, and juice until smooth
  • Pour over baked crust

5. Add Crumb Topping

  • Sprinkle reserved crumb mixture evenly on top

6. Bake

  • Bake 25–30 minutes, until the filling is set and topping is lightly golden
  • Let cool completely, then refrigerate for 1–2 hours

7. Serve

  • Cut into squares or bars
  • Optional: dust with powdered sugar
