Ingredients (serves 4–6)

  • 1 (3.4 oz / 96 g) package instant raspberry gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 (8 oz / 225 g) container whipped topping (like Cool Whip), thawed
  • 1 (8 oz / 225 g) cream cheese, softened
  • 1 (14 oz / 400 g) can sweetened condensed milk
  • 1 cup fresh or frozen raspberries (optional, for extra texture)

Instructions

  1. Dissolve gelatin: In a medium bowl, dissolve the raspberry gelatin in 1 cup of boiling water. Stir well until fully dissolved.
  2. Add cold water: Pour in 1 cup of cold water and mix. Let it cool for 10–15 minutes until it’s slightly thickened but not set.
  3. Mix cream layer: In a large bowl, beat the softened cream cheese until smooth. Gradually add the sweetened condensed milk and mix until creamy.
  4. Combine: Fold the slightly thickened gelatin into the cream cheese mixture until fully blended.
  5. Add whipped topping: Gently fold in the whipped topping until light and fluffy. If using fresh raspberries, fold them in now.
  6. Chill: Pour into a serving dish or individual cups. Refrigerate for at least 2–3 hours until firm.
  7. Serve: Garnish with extra raspberries or a sprig of mint if desired.
