Ingredients
- 1 lb Ground Beef
- 1 small chopped Onion
- 1½ cups Enchilada Sauce
- 8 Corn Tortilla (cut into pieces)
- 1½ cups shredded Cheddar Cheese or Monterey Jack Cheese
- 1 tsp Chili Powder
- ½ tsp Cumin
- Salt and pepper to taste
Instructions
1️⃣ Cook the beef
In a skillet, cook the ground beef and onion over medium heat until the beef is browned. Drain excess fat.
2️⃣ Add seasoning
Stir in chili powder, cumin, salt, pepper, and about ½ cup enchilada sauce.
3️⃣ Layer the casserole
In a greased baking dish:
- Spread a little enchilada sauce on the bottom
- Add a layer of tortilla pieces
- Add beef mixture
- Sprinkle cheese
Repeat layers until ingredients are used.
4️⃣ Top with sauce and cheese
Pour the remaining enchilada sauce over the top and sprinkle the rest of the cheese.
5️⃣ Bake
Bake at 375°F (190°C) for 25–30 minutes, until the cheese is melted and bubbly.
