Ingredients
- 3–4 lb beef chuck roast

Instructions
1. Season the roast
Pat the beef dry and season it well with salt and pepper.
2. Sear the meat
Heat olive oil in a large pot or Dutch oven over medium-high heat.
Sear the roast 3–4 minutes per side until browned.
3. Add vegetables
Place the onion, carrots, potatoes, and garlic around the roast.
4. Add liquid and seasoning
Pour in beef broth, add tomato paste, thyme, rosemary, and bay leaf.
5. Slow cook
- Oven: Cover and cook at 325°F (160°C) for 3–4 hours.
- Slow cooker: Cook on low for 8 hours or high for 4–5 hours.
6. Serve
Remove the roast, slice or shred it, and serve with the vegetables and gravy.
