Salted Caramel Truffles

Here’s a rich, velvety, Salted Caramel Truffles recipe — smooth centers, chocolate coating, and just the right touch of salt. Perfect for gifting or a luxurious bite-size treat!


🍬 Salted Caramel Truffles

Ingredients (Makes ~20–24 truffles)

Caramel Ganache Filling

  • 1 cup soft caramels (about 20–25 pieces) or homemade caramel

  • 2 tbsp heavy cream

  • ½ cup white chocolate chips (helps the centers set creamy, not runny)

  • ¼ tsp sea salt (or to taste)

Chocolate Coating

  • 1½ cups semi-sweet or dark chocolate chips

  • 1 tbsp coconut oil or butter (optional, for smoother coating)

Finishing

  • Flaky sea salt (for topping)


Instructions

1. Make the Caramel Ganache

  • Add caramels and heavy cream to a small saucepan.

  • Heat on low, stirring until smooth and melted.

  • Remove from heat and add white chocolate chips, stirring until completely melted and silky.

  • Add sea salt to taste.

  • Let mixture cool 15–20 minutes, then refrigerate until firm enough to scoop (about 30–40 minutes).


2. Roll the Centers

  • Scoop heaping teaspoons of chilled caramel ganache and roll into balls.

  • Place onto a parchment-lined tray.

  • Freeze 10–15 minutes to firm them before dipping.


3. Prepare the Chocolate Coating

  • Melt chocolate chips + coconut oil in 20–30 second microwave intervals or over a double boiler.

  • Stir until smooth and glossy.


4. Dip the Truffles

  • Using a fork, dip each caramel ball into the melted chocolate.

  • Tap off excess and place back on the parchment.

  • Sprinkle immediately with flaky salt (before the chocolate sets).


5. Set & Store

  • Let truffles set at room temp or refrigerate for 10 minutes.

  • Store in an airtight container:

    • Room temp: 3–4 days

    • Fridge: up to 2 weeks

    • Freezer: 1–2 months


⭐ Variations

  • Dark chocolate caramel truffles: use dark chocolate in both filling & coating.

  • Burnt caramel (slightly smoky): cook homemade caramel a bit darker before adding cream.

  • Caramel–espresso truffles: add ½ tsp espresso powder to the caramel mixture.

  • Salted caramel pecan truffles: roll the ganache balls in finely chopped toasted pecans before dipping.
