Here’s a simple, fluffy Scrambled Eggs on Toast recipe — classic, quick, and perfect for breakfast or a light meal.


🍳 Scrambled Eggs on Toast

Ingredients (Serves 1–2)

  • 2–3 large eggs
  • 2 slices bread (white, whole wheat, or sourdough)
  • 1–2 tbsp milk or cream (optional, for creamier eggs)
  • 1 tbsp butter
  • Salt and black pepper, to taste

Optional toppings:

  • Chopped chives or parsley
  • Shredded cheese
  • Sliced avocado
  • Hot sauce

Instructions

  1. Toast the bread
    • Toast your bread to your preferred level of crispness.
    • Lightly butter it if desired.
  2. Whisk the eggs
    • Crack eggs into a bowl.
    • Add milk or cream (if using), salt, and pepper.
    • Whisk until fully combined and slightly frothy.
  3. Cook the eggs
    • Melt butter in a nonstick skillet over medium-low heat.
    • Pour in the eggs.
    • Let them sit for a few seconds, then gently stir with a spatula, pushing the eggs from the edges toward the center.
    • Continue stirring slowly until soft curds form and eggs are just set but still slightly creamy (about 2–4 minutes).
    • Remove from heat — they’ll continue cooking slightly from residual heat.
  4. Assemble
    • Spoon scrambled eggs over warm toast.
    • Add any desired toppings and serve immediately.

Tips for Extra-Fluffy Eggs

  • Cook low and slow — high heat makes eggs rubbery.
  • Pull them off the heat when they still look slightly glossy.
  • For richer eggs, stir in a small knob of butter at the end.
