🥤 Beetroot Lassi Recipe

Ingredients (Serves 2)

  • 1–2 tsp honey or sugar (adjust to taste)

Instructions

1. Prepare the beetroot

  • If using raw beetroot, peel and chop finely.
  • For a milder flavor, you can boil or steam the beet until tender (~10–15 minutes). Let it cool.

2. Blend the lassi

  • In a blender, combine:
    • chopped beetroot
    • yogurt
    • cold water or milk
    • honey or sugar
    • cardamom (if using)
    • ice cubes
  • Blend until smooth and creamy.

3. Serve

  • Pour into glasses.
  • Garnish with fresh mint or a pinch of ground cardamom.
  • Serve immediately for the freshest taste.
