Ingredients

  • 1 lb (450 g) ground beef
  • 4–5 medium potatoes, thinly sliced (or use frozen hashbrowns)
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • ½ cup milk
  • Salt and pepper to taste
  • Optional: 1 tsp garlic powder, ½ tsp paprika

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
  2. Cook the beef:
    • In a skillet over medium heat, cook ground beef with onion until beef is browned and onions are soft.
    • Drain excess fat and season with salt, pepper, and optional spices.
  3. Prepare the sauce:
    • In a bowl, mix the cream of mushroom soup and milk until smooth.
  4. Layer the casserole:
    • Spread a layer of potatoes on the bottom of the dish.
    • Top with half the beef mixture.
    • Pour half the soup mixture over the top.
    • Sprinkle with 1 cup of cheese.
    • Repeat layers: potatoes → beef → soup → cheese.
  5. Cover and bake:
    • Cover with foil and bake 45–55 minutes, until potatoes are tender.
  6. Optional final step:
    • Remove foil, sprinkle remaining cheese on top, and bake 5–10 more minutes until cheese is melted and bubbly.
  7. Serve hot with a simple salad or steamed vegetables.

  • Use Yukon gold or red potatoes for creamy texture.
  • Swap in cream of celery or chicken soup for a different flavor.
  • Add cooked bacon or sautéed mushrooms for extra richness.
