Ingredients (for 4 servings)

  • 8 chicken drumsticks
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika (or regular paprika)
  • ½ tsp onion powder
  • ½ tsp black pepper
  • 1 tsp salt (adjust to taste)
  • Optional: ½ tsp chili flakes for a little heat
  • Fresh herbs (like parsley or thyme) for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Prepare the drumsticks: Pat them dry with paper towels. This helps the skin get crispy.
  3. Season: In a large bowl, toss the drumsticks with olive oil, garlic powder, paprika, onion powder, salt, pepper, and chili flakes if using. Make sure each drumstick is evenly coated.
  4. Arrange on a baking sheet: Line the sheet with parchment paper or foil for easy cleanup. Place drumsticks on the sheet with some space between them.
  5. Bake: Cook in the preheated oven for 35–40 minutes. Halfway through, flip the drumsticks to ensure even browning.
  6. Check for doneness: The internal temperature should reach 165°F (74°C). The skin should be golden brown and crispy.
  7. Garnish and serve: Sprinkle with fresh herbs and serve with your favorite sides like roasted vegetables, rice, or a fresh salad.

  • Let the chicken sit uncovered in the fridge for 30 minutes before baking to dry the skin.
  • Use a wire rack on the baking sheet so heat circulates around the drumsticks.
