Posted on December 1, 2025 by Admin

Here’s an easy, rich, No-Bake Pecan Pie Balls recipe — all the flavor of pecan pie rolled into bite-size treats, dipped in chocolate, and perfect for holidays or gifting!

🥧✨ No-Bake Pecan Pie Balls

Ingredients (Makes 20–24 balls)

  • 1 ½ cups finely chopped pecans (toasted for best flavor)
  • 1 cup graham cracker crumbs
  • 1 cup powdered sugar
  • ½ cup light corn syrup or maple syrup
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 1–1 ½ cups chocolate chips or almond bark (for dipping)
  • 1–2 tsp coconut oil (optional, for smoother melting)

🥣 Instructions

1. Toast the pecans (recommended)

  • Spread pecans on a baking sheet.
  • Toast at 350°F for 6–8 minutes, until fragrant.
  • Cool completely.

2. Make the filling

In a large bowl, mix:

  • chopped pecans
  • graham cracker crumbs
  • powdered sugar
  • salt

Stir in:

  • corn syrup (or maple)
  • vanilla extract

Mix until a sticky dough forms.
If too crumbly, add a little more syrup (1 tsp at a time).
If too sticky, add more graham crumbs.

3. Roll into balls

  • Scoop about 1 tablespoon of mixture at a time.
  • Roll into smooth balls.
  • Place on a parchment-lined tray.
  • Freeze 15–20 minutes to firm up for dipping.

4. Dip in chocolate

  • Melt chocolate chips + coconut oil in 20–30 second microwave bursts, stirring until smooth.
  • Dip each ball using a fork, tap to remove excess, and place back on parchment.

5. Set & serve

  • Let chocolate harden at room temperature, or chill 10 minutes in the fridge.
  • Store in an airtight container.
