Diabetic Billion Dollar Buttery Biscuits

Here is a Diabetic-Friendly version of “Billion Dollar Buttery Biscuits.”
The original recipe is rich and high-carb, so this version uses almond flour, Greek yogurt, and sugar-free ingredients to keep them tender, fluffy, and low-carb — without losing the buttery goodness!


🧈🍞 Diabetic-Friendly Billion Dollar Buttery Biscuits

Low-carb • No added sugar • Golden & fluffy

Ingredients (Makes 8 biscuits)

  • 2 cups almond flour
  • ¼ cup coconut flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 4 tbsp cold butter, cut into small cubes
  • ½ cup plain Greek yogurt (full-fat works best)
  • 1 egg
  • ¼ cup unsweetened almond milk
  • Optional: ½ tsp garlic powder or dried herbs
  • Optional topping: 1–2 tbsp melted butter + pinch of salt

🥣 Instructions

1. Preheat oven

  • Preheat to 400°F (205°C).
  • Line a baking sheet with parchment paper.

2. Mix dry ingredients

In a large bowl, combine:

  • almond flour
  • coconut flour
  • baking powder
  • salt

3. Cut in the butter

  • Add the cold butter cubes.
  • Use a fork or pastry cutter to blend until mixture resembles coarse crumbs.
    • (Cold butter = flakier biscuits)

4. Add wet ingredients

In a small bowl whisk:

  • egg
  • Greek yogurt
  • almond milk

Pour into dry mixture and stir until dough forms.
If dough seems too wet, add 1–2 tbsp almond flour.


5. Shape the biscuits

  • Scoop out 8 mounds of dough using a spoon or cookie scoop.
  • Gently shape into rounds and place on the baking sheet.

6. Bake

  • Bake 13–16 minutes, or until golden brown on top.

7. Optional: Butter glaze

Brush warm biscuits with:

  • 1–2 tbsp melted butter
  • Pinch of salt or garlic powder

  • Keep butter very cold before mixing.
  • Do not overmix the dough.
  • Greek yogurt helps mimic the richness of the original recipe while keeping carbs low.
