Cranberry bread loaf

Oh that’s a classic ❤️🍞 — slightly tart, lightly sweet, and perfect with coffee.

Here’s a moist, bakery-style cranberry bread loaf recipe.


🍒 Cranberry Bread Loaf

🛒 Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup orange juice (fresh or bottled)
  • ¼ cup vegetable oil (or melted butter)
  • 1 egg
  • 1 tbsp orange zest (optional but recommended)
  • 1½ cups fresh or frozen cranberries (do not thaw if frozen)
  • ½ cup chopped walnuts or pecans (optional)

🔪 Instructions

1️⃣ Preheat

  • Preheat oven to 350°F (175°C)
  • Grease or line a 9×5-inch loaf pan.

2️⃣ Mix Dry Ingredients

In a large bowl, whisk:

  • Flour
  • Sugar
  • Baking powder
  • Baking soda
  • Salt

3️⃣ Mix Wet Ingredients

In another bowl, whisk:

  • Orange juice
  • Oil
  • Egg
  • Orange zest

4️⃣ Combine

  • Pour wet ingredients into dry.
  • Stir just until combined (don’t overmix).
  • Fold in cranberries and nuts.

Batter will be thick.


5️⃣ Bake

  • Pour into loaf pan.
  • Bake 50–60 minutes, until a toothpick comes out clean.
  • Cool in pan 10 minutes, then transfer to rack.

✨ Optional Orange Glaze

Mix:

  • ½ cup powdered sugar
  • 1–2 tbsp orange juice

Drizzle over cooled loaf.


💡 Tips

  • Toss cranberries in 1 tbsp flour before folding in to prevent sinking.
  • For extra sweetness, sprinkle 1 tbsp sugar on top before baking.
  • Tastes even better the next day.
