City Chicken

Here is a classic, authentic City Chicken recipe — the old-fashioned Polish-American dish that looks like fried chicken but is actually pork (and sometimes veal) on skewers. It’s tender, crispy, and baked to perfection.


🍢🥘 City Chicken (Traditional Polish-American Recipe)

Ingredients (4–6 servings)

  • 1 ½–2 lbs pork and/or veal, cut into 1½–2 inch cubes
    (pork only is most common today)
  • 6–8 wooden skewers (4–6 inch length)
  • Salt & pepper, to taste
  • 1 cup flour
  • 2 eggs
  • 2 tbsp water or milk
  • 1 ½ cups seasoned breadcrumbs
  • 3–4 tbsp oil (for browning)
  • 1–2 cups chicken broth (for baking)
  • Optional: paprika, garlic powder, onion powder
  • Optional sauce: gravy made from the pan drippings

🥣 Instructions

1. Prepare skewers

Thread pieces of pork/veal onto skewers tightly so they resemble a small “drumstick.”
Season with salt and pepper.


2. Prepare breading station

  • Bowl 1: flour
  • Bowl 2: beaten eggs + water/milk
  • Bowl 3: seasoned breadcrumbs (add paprika, garlic powder, and onion powder if you like)

3. Bread the skewers

Coat each skewer in:

  1. flour
  2. egg
  3. breadcrumbs

Press breadcrumbs on firmly.


4. Brown the city chicken

Heat oil in a large skillet over medium-high.
Brown the skewers on all sides — just brown, don’t cook through.
Transfer to a baking dish.


5. Bake

Preheat oven to 350°F (175°C).

Pour chicken broth into the bottom of the baking dish until it comes up about ¼–½ inch.

Cover tightly with foil and bake:

  • 45–60 minutes covered, then
  • Uncover and bake 10–15 minutes more to crisp the coating.

Meat should be fork-tender.


⭐ Tips for Perfect City Chicken

  • Broth in the pan keeps the meat moist and tender.
  • Browning first gives it that traditional golden crust.
  • Pork shoulder or loin works best for juiciness.
  • If using veal, mix pork + veal for traditional flavor.

🍽 Serving Ideas

  • Mashed potatoes + gravy
  • Buttered noodles
  • Green beans or peas
  • Cabbage, sauerkraut, or coleslaw

🍗 Variations

Gravy Version

Make gravy from the pan drippings and pour over the city chicken before serving.

Crispy No-Bake Version

Skip the broth and bake uncovered the entire time (less tender but crispier).

Air Fryer City Chicken

Air fry at 375°F for 20–25 minutes, turning halfway.
