Here’s a hearty, comforting Cheesy Beef & Potato Casserole 🥔🧀 — layers of tender potatoes, savory beef, and gooey cheese baked to perfection.


🥩 Cheesy Beef & Potato Casserole

🧂 Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups peeled potatoes, thinly sliced (or 4–5 medium potatoes)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 cup sour cream
  • ½ cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 2 tbsp butter

👩‍🍳 Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish.

2️⃣ Cook Beef

  • In a skillet, brown ground beef with onion and garlic.
  • Drain excess fat.
  • Season with salt, pepper, and paprika.

3️⃣ Prepare Sauce

  • In a bowl, mix sour cream, milk, 1 cup cheddar, and a pinch of salt and pepper.

4️⃣ Layer Casserole

  • Place half of sliced potatoes in the bottom of the dish.
  • Add half of the cooked beef mixture.
  • Pour half of the cheesy sour cream sauce over.
  • Repeat layers: potatoes → beef → sauce.
  • Dot top with butter and sprinkle extra cheddar.

5️⃣ Bake

  • Cover with foil and bake 45–50 minutes.
  • Remove foil and bake an additional 15 minutes until top is golden and bubbly.
  • Test potatoes with a fork — they should be tender.

6️⃣ Serve

  • Let rest 5–10 minutes before serving for easier slicing.
