🧂 Ingredients

Chicken

  • 3–4 lbs bone-in chicken pieces (thighs, drumsticks, breasts, wings)

Marinade

  • 2 cups buttermilk
  • 1 tbsp hot sauce
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp black pepper

Seasoned Flour Coating

  • 2 cups all-purpose flour
  • ½ cup cornstarch (for extra crispiness)
  • 1 tbsp paprika
  • 1 tsp cayenne pepper (adjust heat)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper

For Frying

  • Peanut oil or vegetable oil (enough for deep frying)

1️⃣ Marinate

  • Mix marinade ingredients.
  • Add chicken, coat well, cover, and refrigerate at least 4 hours (overnight is best).

2️⃣ Prepare Coating

  • In a large bowl, combine flour, cornstarch, and all spices.

3️⃣ Dredge

  • Remove chicken from marinade (let excess drip off).
  • Press firmly into seasoned flour.
  • For extra crunch: dip back into marinade briefly, then into flour again (double dredge).

4️⃣ Fry

  • Heat oil to 325–350°F (165–175°C).
  • Fry in batches:
    • Dark meat: 12–14 minutes
    • White meat: 10–12 minutes
  • Internal temp should reach 165°F (74°C).

5️⃣ Drain & Rest

  • Drain on a wire rack (not paper towels — keeps crust crisp).
