Carrot Cake (No Oven)

Here’s a soft, moist no-oven carrot cake you can make on the stovetop (or steam) — no baking required 🥕🍰


🥕 No-Oven Carrot Cake (Stovetop Method)

Ingredients

  • 1 cup grated carrots (finely grated & lightly squeezed)
  • 1 cup all-purpose flour (or ¾ cup whole wheat flour)
  • ½ cup brown sugar (or ⅓ cup honey)
  • ¼ cup oil (vegetable or coconut)
  • ½ cup milk (dairy or plant-based)
  • 1 egg
    (or ¼ cup yogurt for eggless version)
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp chopped walnuts or raisins (optional)

🍳 How to Cook Without an Oven

Step 1: Prepare the Pan

  • Grease a small 6–7 inch round pan.
  • Line bottom with parchment (optional but helpful).

Step 2: Make the Batter

  1. In a bowl, mix oil + sugar.
  2. Add egg (or yogurt), milk, and vanilla.
  3. Stir in grated carrots.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.
  5. Fold dry ingredients into wet mixture.
  6. Add nuts/raisins if using.

Do not overmix.


Step 3: Stovetop Baking Method

  1. Take a large deep pot or pressure cooker.
  2. Place a metal stand or ring inside.
  3. Preheat covered on low heat for 5–7 minutes.
  4. Place cake pan inside (no water needed).
  5. Cover and cook on low for 35–45 minutes.
  6. Check with a toothpick — it should come out clean.

⚠️ If using a pressure cooker: do NOT use the whistle.


Step 4: Cool

Let cool 15–20 minutes before removing from pan.


🧁 Optional Cream Cheese Frosting

  • ½ cup cream cheese
  • 2 tbsp powdered sugar
  • ½ tsp vanilla

Mix until smooth and spread over cooled cake.


Storage

  • Room temp: 1 day
  • Fridge: up to 5 days
