HOMEMADE ANGEL BISCUITS

Here is a classic, fluffy Southern-style Homemade Angel Biscuits recipe — the perfect blend of biscuit + yeast roll, soft, tall, tender, and slightly sweet. They’re called angel biscuits because they bake up light as air. 😇🥐

These are GREAT for breakfast, holiday meals, or making breakfast sandwiches.


😇 HOMEMADE ANGEL BISCUITS

Ingredients (Makes 18–24 biscuits)

Dry Ingredients

  • 5 cups all-purpose flour
  • ⅓ cup sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 2 tsp salt

Fats

  • ½ cup cold unsalted butter, cubed
  • ½ cup shortening (or more butter)

Yeast Mixture

  • 1 packet (2 ¼ tsp) active dry yeast
  • ¼ cup warm water (110°F)
  • 1 tsp sugar

Wet Ingredients

  • 2 cups buttermilk (cold)

🥣 Instructions

1. Activate the yeast

  • Stir yeast + warm water + 1 tsp sugar.
  • Let sit 5–10 minutes until foamy.

2. Mix the dry ingredients

In a large bowl whisk:

  • flour
  • sugar
  • baking powder
  • baking soda
  • salt

3. Cut in the fats

Add cold butter and shortening to the dry mixture.
Use a pastry cutter or your fingers to cut it in until the mixture looks like coarse crumbs.

Cold fat = flaky biscuits!


4. Add buttermilk + yeast

  • Stir in the activated yeast mixture.
  • Add cold buttermilk.
  • Mix just until the dough comes together — do not overmix.

Dough will be soft and slightly sticky.


5. Rest the dough (important!)

Cover and let the dough rest in the fridge 1–2 hours, or up to overnight
→ This makes the yeast develop flavor and keeps the biscuits tender.


6. Roll + Cut

  1. Turn dough onto a floured surface.
  2. Gently pat or roll to about ¾–1 inch thickness.
  3. Cut with a round cutter (2–3 inches).
  4. Place biscuits close together (touching) on a greased or parchment-lined baking sheet.

7. Rise (optional but recommended)

Let the shaped biscuits sit at room temp 20–30 minutes.
This helps them bake taller and fluffier.


8. Bake

Bake at 400°F (205°C) for 12–15 minutes, until golden on top.

Brush with melted butter immediately after baking.

  • Keep your butter, shortening, and buttermilk cold.
  • Resting the dough is the key to their tenderness.
  • Cut straight down—don’t twist the biscuit cutter.
  • Place biscuits touching for higher rise.
  • For extra-soft biscuits, brush with butter before and after baking.
