🥬 Slow Cooker Kielbasa & Cabbage

Ingredients

  • 1–1½ lb kielbasa (smoked sausage), sliced into rounds
  • 1 small head green cabbage, chopped into chunks
  • 1 large onion, sliced
  • 2–3 cloves garlic, minced
  • 3–4 medium potatoes, chopped (Yukon gold or red are perfect)
  • 1 cup chicken broth (or beer if you’re feeling fun)
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt (go light—kielbasa is salty)
  • Optional but great:
    • 1 tsp caraway seeds
    • ½ tsp red pepper flakes
    • 1 tbsp Dijon or whole-grain mustard

How to Make It

  1. Layer it up:
    Put potatoes on the bottom of the slow cooker, then onions, garlic, cabbage, and kielbasa on top.
  2. Season:
    Sprinkle in paprika, pepper, salt, and any optional spices.
  3. Pour & stir:
    Add broth and vinegar. Give it a gentle toss so everything’s lightly coated.
  4. Cook:
    • Low: 6–7 hours
    • High: 3–4 hours
      Cook until potatoes are tender and cabbage is silky, not mushy.
  5. Finish:
    Taste and adjust seasoning. Stir in mustard if using.

Pro Tips

  • Want it richer? Toss in a tablespoon of butter at the end 🧈
  • Like browned sausage? Sear the kielbasa first—but totally optional.
  • Leftovers are even better the next day.
