Keto Cottage Cheese Cinnamon Swirl Cloud Bread

Ingredients (makes 6–8 pieces)

Cloud Bread

  • 3 large eggs, separated
  • ½ cup full-fat cottage cheese (small curd works best)
  • ¼ tsp cream of tartar (or a pinch of salt)
  • 1 tbsp keto sweetener (erythritol, monk fruit, or blend)
  • ½ tsp vanilla extract

Cinnamon Swirl

  • 1 tbsp butter, melted
  • 1 tbsp keto brown sugar substitute
  • ½ tsp cinnamon

How to Make It

  1. Prep
    • Preheat oven to 300°F (150°C)
    • Line a baking sheet with parchment paper
  2. Blend cottage cheese
    • Blend cottage cheese until completely smooth (important for cloud texture)
  3. Egg whites
    • Beat egg whites with cream of tartar until stiff peaks
  4. Egg yolk mix
    • Whisk yolks with blended cottage cheese, sweetener, and vanilla
  5. Fold
    • Gently fold yolk mixture into egg whites in 2–3 additions
    • Keep it airy—no rushing here
  6. Shape
    • Spoon batter into rounds or one loaf-style shape on the baking sheet
  7. Cinnamon swirl
    • Mix melted butter, sweetener, and cinnamon
    • Swirl lightly over the tops with a toothpick or knife
  8. Bake
    • Bake 25–30 minutes until lightly golden and set
  9. Cool
    • Cool completely (they firm up as they cool)

Tips for Best Results

  • Blend cottage cheese until silky smooth
  • Stiff peaks = fluffy bread
  • Don’t over-swirl or it sinks

  • Toast lightly with butter
