Here’s a solid, easy option that keeps sugar and carbs low without tasting sad.

Simple Diabetic-Friendly Vanilla Cake

Why it works:

  • No refined sugar
  • Low-carb flour
  • Sweetened with a sugar substitute that doesn’t spike blood sugar

Ingredients

  • 2 cups almond flour
  • 3 large eggs
  • ½ cup erythritol or monk fruit sweetener (granulated)
  • ¼ cup unsalted butter (melted) or coconut oil
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F / 175°C.
  2. Grease an 8-inch pan or line with parchment.
  3. Whisk eggs and sweetener until smooth.
  4. Add butter, almond milk, and vanilla.
  5. Mix in almond flour, baking powder, and salt.
  6. Pour into pan and bake 25–30 minutes.
  7. Cool completely before slicing.

Optional Frosting (Sugar-Free)

  • ½ cup cream cheese
  • 2 tbsp powdered erythritol
  • ½ tsp vanilla

Mix until smooth and spread lightly.


Variations

  • Chocolate: Add ¼ cup unsweetened cocoa powder
  • Lemon: Add lemon zest + 1 tbsp lemon juice
  • Carrot cake: Add grated carrot + cinnamon (still low sugar)
