Ohhh yes—this is peak comfort food 🥔🧀 Loaded Mashed Potato Casserole is basically a baked potato in casserole form, and everyone goes back for seconds.

Loaded Mashed Potato Casserole

Ingredients

  • 3 lbs russet potatoes, peeled & cubed
  • ½ cup butter
  • 1 cup sour cream
  • ¾–1 cup milk or half-and-half (warm)
  • 2 cups cheddar cheese, shredded (divided)
  • 6 slices bacon, cooked & crumbled
  • ½ cup green onions, sliced
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: garlic powder to taste

Instructions

  1. Cook potatoes
    Boil in salted water 15–20 minutes until fork-tender. Drain well.
  2. Mash
    Mash hot potatoes with butter, sour cream, milk, salt, pepper (and garlic powder if using) until creamy.
  3. Mix the goods
    Fold in:

    • 1½ cups cheddar
    • Most of the bacon
    • Half the green onions
  4. Assemble
    Spread into a buttered 9×13 dish.
    Top with remaining cheese and bacon.
  5. Bake
    Bake at 375°F (190°C) for 25–30 minutes, until hot and bubbly.
  6. Finish
    Sprinkle with remaining green onions before serving.

  • Bake straight from fridge (add 10–15 minutes)
  • Freeze without toppings for best texture
