Ingredients
- 3 lbs russet potatoes, peeled & cubed

- 2 cups cheddar cheese, shredded (divided)
- 6 slices bacon, cooked & crumbled
- ½ cup green onions, sliced
- 1 tsp salt

Instructions
- Cook potatoes
Boil in salted water 15–20 minutes until fork-tender. Drain well. - Mash
Mash hot potatoes with butter, sour cream, milk, salt, pepper (and garlic powder if using) until creamy. - Mix the goods
Fold in:- 1½ cups cheddar
- Most of the bacon
- Half the green onions
- Assemble
Spread into a buttered 9×13 dish.
Top with remaining cheese and bacon. - Bake
Bake at 375°F (190°C) for 25–30 minutes, until hot and bubbly. - Finish
Sprinkle with remaining green onions before serving.
