Ooo yes—this one’s cozy and elegant 🦐🧀 Shrimp and Spinach Gratin is basically comfort food dressed up for company.

Shrimp and Spinach Gratin

Ingredients

  • 1 lb shrimp, peeled & deveined
  • 4 cups spinach
    • fresh (wilted & squeezed dry) or frozen (thawed & well-drained)
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 Tbsp flour
  • 1½ cups milk or half-and-half
  • ½ cup heavy cream (optional, extra rich)
  • ¾ cup Gruyère or mozzarella, shredded
  • ¼ cup Parmesan, grated
  • ½ tsp salt
  • ¼ tsp black pepper
  • Pinch nutmeg (optional but classic)

Topping

  • ½ cup breadcrumbs or panko
  • 2 Tbsp butter, melted

Instructions

  1. Prep shrimp
    Season lightly with salt & pepper. Sauté quickly in olive oil (1–2 min per side) just until pink. Set aside.
  2. Make the sauce
    • Melt butter, add garlic, cook 30 seconds
    • Whisk in flour; cook 1 minute
    • Slowly add milk (and cream if using), whisking until thick
    • Season with salt, pepper, nutmeg
    • Stir in half the cheeses until smooth
  3. Assemble
    • Spread spinach in a buttered baking dish
    • Arrange shrimp on top
    • Pour sauce over everything
    • Sprinkle remaining cheese
  4. Top & bake
    • Mix breadcrumbs with melted butter, sprinkle on top
    • Bake at 375°F (190°C) for 20–25 minutes until bubbly and golden
  5. Rest & serve
    Let it sit 5 minutes before serving.

  • 🧻 Dry spinach well to avoid watery gratin
  • 🍋 A squeeze of lemon at the end brightens everything
  • 🌶️ Add red pepper flakes if you like a little heat
  • 🍷 Splash of white wine in the sauce = restaurant vibes
