Mandarin Orange Salad

Fresh, bright, and a little retro—in the best way 😄
Here’s a classic Mandarin Orange Salad, plus an upgraded option if you want to modernize it.

🍊 Mandarin Orange Salad (Classic & Easy)

Ingredients

  • 2 cans mandarin oranges, drained
  • 1 small can crushed pineapple, drained
  • 1 cup mini marshmallows
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup sour cream (or Greek yogurt for lighter)
  • Optional: ½ cup chopped pecans or walnuts

Instructions

  1. In a large bowl, gently mix the mandarin oranges and pineapple.
  2. Fold in marshmallows and coconut.
  3. Stir in sour cream until everything is coated.
  4. Chill for at least 1 hour before serving (overnight is even better).

✨ Freshened-Up Version (Less Sweet, More Fresh)

If you want something lighter and more modern:

Ingredients

  • Fresh mandarin segments (or canned, well-drained)
  • Baby spinach or mixed greens
  • Thinly sliced red onion
  • Toasted almonds or pecans
  • Feta or goat cheese

Dressing

  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar or orange juice
  • Salt & pepper

Toss gently and serve immediately.
