Herb & Cheese Quick Bread 🧀🌿

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp garlic powder (optional but recommended)
  • 1½ cups shredded cheese (cheddar, gruyère, or a mix)
  • 2–3 tbsp fresh herbs, chopped (rosemary, thyme, chives, parsley—any combo)
  • 1 cup milk (or buttermilk for extra tenderness)
  • 2 large eggs
  • ¼ cup olive oil or melted butter

Instructions

  1. Preheat oven to 350°F / 175°C. Grease a loaf pan.
  2. In a large bowl, whisk flour, baking powder, salt, pepper, and garlic powder.
  3. Stir in cheese and herbs (this helps keep them evenly distributed).
  4. In another bowl, whisk milk, eggs, and oil/butter.
  5. Gently fold wet ingredients into dry—don’t overmix.
  6. Pour into pan, smooth the top.
  7. Bake 40–50 minutes, until golden and a toothpick comes out clean.
  8. Cool 10 minutes, then slice while still warm (mandatory).

Optional upgrades

  • Sprinkle extra cheese on top before baking
  • Add caramelized onions or sun-dried tomatoes
  • Finish with flaky salt and a brush of melted butter

Perfect with soup, eggs, or just torn apart by hand like a civilized goblin.
