keto-friendly Pizza Soup

Heck yes 🍕🥣 — all the pizza vibes, none of the carbs.
This Keto-Friendly Pizza Soup is thick, cheesy, and dangerously good.

Keto Pizza Soup

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil (if needed)
  • 1 small onion, finely diced (optional; omit or reduce for stricter keto)
  • 3 cloves garlic, minced
  • 1 cup sliced pepperoni
  • 1 (14 oz) can crushed tomatoes or 1½ cups sugar-free marinara
  • 2 cups chicken broth
  • 1 tsp Italian seasoning
  • ½ tsp fennel seeds (optional, very pizza)
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste

Creamy finish

  • 1 cup heavy cream
  • 1½ cups shredded mozzarella
  • ½ cup grated Parmesan

Toppings (optional but fun)

  • Mushrooms
  • Bell peppers (small amount)
  • Olives
  • Fresh basil

Instructions

  1. Brown the sausage
    In a large pot over medium heat, brown sausage until cooked through.
    Drain excess grease if needed.
  2. Build the flavor
    Add onion (if using) and cook until soft.
    Stir in garlic and cook 30 seconds.
  3. Pizza base
    Add pepperoni, crushed tomatoes/marinara, chicken broth, Italian seasoning, fennel, and red pepper flakes.
    Simmer 10–15 minutes.
  4. Make it creamy
    Lower heat. Stir in heavy cream.
  5. Cheese it up
    Add mozzarella and Parmesan gradually, stirring until melted and smooth.
    Keep heat low—no boiling.
  6. Serve
    Top with basil, extra pepperoni, or a sprinkle of Parmesan.

Keto Tips

  • Check labels: marinara & pepperoni should be no added sugar
  • For ultra-low carb, use less tomato and more broth + cream
  • One bowl ≈ 5–7 net carbs (varies by brands)

Variations

  • 🍗 Chicken pizza soup: swap sausage for shredded chicken
  • 🥓 Meat-lover’s: add bacon + ham
  • 🌶️ Buffalo pizza soup: add buffalo sauce + blue cheese crumble
  • 🧀 Extra thick: stir in 2 tbsp cream cheese
