Here’s an easy, bakery-style recipe for Sausage Rolls — golden, flaky puff pastry wrapped around savory seasoned sausage. Great for parties, snacks, or breakfast!


🥐✨ Easy Sausage Rolls

Ingredients

  • 1 lb sausage (pork sausage, breakfast sausage, or Italian sausage)
  • 1 sheet puff pastry, thawed but still cold
  • 1 small onion, finely minced (optional)
  • 1–2 cloves garlic, minced (optional)
  • 1 tsp dried parsley
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (omit if sausage is salty)
  • 1 egg (for egg wash)
  • Optional: ¼ cup breadcrumbs for firmer filling
  • Optional: sesame seeds or poppy seeds for topping

🥣 Instructions

1. Prep the filling

In a bowl, mix together:

  • sausage
  • onion
  • garlic
  • parsley
  • paprika
  • black pepper
  • breadcrumbs (if using)

Don’t overmix — just combine lightly.


2. Prepare the pastry

  1. Preheat oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface into a rectangle.
  3. Cut it into 2 long strips (or 3 for smaller rolls).

3. Add the sausage

Form the sausage mixture into long logs and place them down the center of each pastry strip.


4. Roll & seal

  1. Brush one long edge of the pastry with beaten egg.
  2. Roll the pastry over the sausage tightly and seal the seam.
  3. Place rolls seam-side down.

5. Slice

Cut into:

  • Large rolls: 3–4 each strip
  • Party-size bites: 1–2 inch pieces

Place on a parchment-lined baking sheet.


6. Egg wash & bake

Brush tops with egg wash.
Add sesame or poppy seeds if desired.

Bake 20–25 minutes (15–18 for small bites), until:

  • pastry is golden
  • sausage is fully cooked
  • bottoms are crisp

  • Cheesy: Add a strip of cheddar or a sprinkle of mozzarella inside.
  • Spicy: Use hot sausage or add crushed red pepper.
  • Breakfast style: Use breakfast sausage + a little maple syrup in the filling.
  • Herby: Add thyme or sage.
  • Australian-style: Use only sausage + breadcrumbs + a splash of milk to bind.
