Ahhh, the classic 🥓🥔🧀 — hearty, cozy, and feeds a crowd.
Here’s a traditional Amish Breakfast Casserole: simple ingredients, big comfort.

Amish Breakfast Casserole

Ingredients

  • 1 lb bacon, chopped
  • 1 small onion, diced
  • 6–8 large eggs
  • 2 cups milk (whole is best)
  • 2 cups shredded cheese
    • Classic: cheddar or Colby-Jack
  • 3 cups frozen hash browns (diced or shredded, thawed)
  • Salt & black pepper to taste
  • ½ tsp garlic powder (optional)
  • ½ tsp paprika (optional)

Instructions

  1. Cook the bacon
    In a skillet, cook bacon until crisp. Remove and drain.
    Sauté onion in the bacon drippings until soft.
  2. Assemble the casserole
    Grease a 9×13 baking dish.
    Spread hash browns evenly on the bottom.
    Top with bacon and onions, then sprinkle cheese over everything.
  3. Mix the eggs
    In a bowl, whisk eggs, milk, salt, pepper, garlic powder, and paprika.
  4. Pour & rest
    Pour egg mixture evenly over the casserole.
    Cover and refrigerate overnight (very Amish, very important).
  5. Bake
    Preheat oven to 350°F (175°C).
    Bake uncovered for 45–55 minutes, until set and lightly golden.
  6. Rest & serve
    Let stand 10 minutes before slicing.

Tips & Variations

  • 🥓 Swap bacon for sausage or ham
  • 🧀 Sharp cheddar = stronger flavor
  • 🥔 Diced hash browns give more texture
  • 🌶️ Add bell peppers or jalapeños if you like a kick
  • 🥛 For extra richness, replace ½ cup milk with cream
