Creamy Chicken Spinach Soup

Ingredients

  • 1 tbsp butter or olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 4 cups chicken broth
  • 1½ cups cooked chicken, shredded or diced
  • 1 cup half-and-half or heavy cream
  • 2–3 cups fresh spinach (or 1 cup frozen, thawed & squeezed dry)
  • ½ tsp Italian seasoning
  • ¼ tsp nutmeg (optional but cozy)
  • Salt & black pepper to taste
  • Grated Parmesan, for serving (optional)

Instructions

  1. Sauté the base
    Heat butter/oil in a soup pot over medium heat.
    Add onion, carrots, and celery. Cook 5–6 minutes until softened.
    Stir in garlic and cook 30 seconds.
  2. Thicken it
    Sprinkle flour over veggies and stir for 1–2 minutes to cook out the raw flour taste.
  3. Build the soup
    Slowly whisk in chicken broth until smooth.
    Bring to a gentle simmer and cook 8–10 minutes.
  4. Make it creamy
    Stir in chicken, cream, Italian seasoning, nutmeg, salt, and pepper.
    Simmer 5 minutes.
  5. Add spinach
    Stir in spinach and cook just until wilted (1–2 minutes).
  6. Serve
    Taste and adjust seasoning. Top with Parmesan and black pepper.

  • 🍄 Mushrooms make it deeper and more savory
  • 🧄 Add a splash of white wine before the broth
  • 🌶️ Pinch of red pepper flakes for gentle heat
