Classic, saucy, and very cheesy.
Beef Enchiladas (Extra Cheesy!)
Ingredients
Beef Filling
- 1 lb ground beef
- ½ small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- ½ tsp cumin
- Salt & black pepper, to taste
Enchiladas
- 8–10 flour or corn tortillas
- 2 cups red enchilada sauce (store-bought or homemade)
- 3 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend — yes, EXTRA 😏)
Instructions
- Preheat oven
Preheat to 375°F (190°C). Grease a 9×13 baking dish. - Cook beef
Brown ground beef with onion until cooked through.
Drain excess grease.
Stir in garlic, chili powder, cumin, salt, and pepper. - Assemble enchiladas
Spread a thin layer of enchilada sauce in the bottom of the dish.
Fill each tortilla with beef and a little cheese.
Roll tightly and place seam-side down. - Sauce & cheese (the best part)
Pour remaining enchilada sauce over the top.
Cover generously with the remaining cheese — don’t be shy. - Bake
Cover with foil and bake 20 minutes.
Uncover and bake another 10–15 minutes until bubbly and golden. - Serve hot
Rest 5 minutes before serving.

- Sour cream
- Chopped cilantro
- Sliced jalapeños
- Diced onions
- Extra enchilada sauce (always a good idea)
