Ohhh yes — BEEF ENCHILADAS with extra cheese on top coming right up 😄🧀🌶️
Classic, saucy, and very cheesy.

Beef Enchiladas (Extra Cheesy!)

Ingredients

Beef Filling

  • 1 lb ground beef
  • ½ small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt & black pepper, to taste

Enchiladas

  • 8–10 flour or corn tortillas
  • 2 cups red enchilada sauce (store-bought or homemade)
  • 3 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend — yes, EXTRA 😏)

Instructions

  1. Preheat oven
    Preheat to 375°F (190°C). Grease a 9×13 baking dish.
  2. Cook beef
    Brown ground beef with onion until cooked through.
    Drain excess grease.
    Stir in garlic, chili powder, cumin, salt, and pepper.
  3. Assemble enchiladas
    Spread a thin layer of enchilada sauce in the bottom of the dish.
    Fill each tortilla with beef and a little cheese.
    Roll tightly and place seam-side down.
  4. Sauce & cheese (the best part)
    Pour remaining enchilada sauce over the top.
    Cover generously with the remaining cheese — don’t be shy.
  5. Bake
    Cover with foil and bake 20 minutes.
    Uncover and bake another 10–15 minutes until bubbly and golden.
  6. Serve hot
    Rest 5 minutes before serving.

Optional Toppings

  • Sour cream
  • Chopped cilantro
  • Sliced jalapeños
  • Diced onions
  • Extra enchilada sauce (always a good idea)

Tips for Next-Level Enchiladas

  • Warm tortillas before rolling to prevent tearing
  • Lightly fry corn tortillas for authentic flavor
  • Mix a little sour cream into the beef for creamy filling
  • Add olives or green chiles for extra pop
