Cottage Cheese Banana Bread

Ingredients

  • 3 ripe bananas, mashed
  • ½ cup cottage cheese (small or large curd; blended for smoother texture)
  • 2 eggs
  • ⅓ cup melted butter or oil
  • ½ cup sugar (or brown sugar; honey works too)
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon (optional)
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat oven
    Preheat to 350°F (175°C). Grease or line a loaf pan.
  2. Mix wet ingredients
    In a bowl, mash bananas. Stir in cottage cheese, eggs, butter, sugar, and vanilla.
  3. Add dry ingredients
    Mix in baking soda, salt, and cinnamon. Gently fold in flour until just combined.
  4. Bake
    Pour batter into loaf pan.
    Bake 50–60 minutes, until a toothpick comes out clean.
  5. Cool & serve
    Let cool 10–15 minutes before slicing.

Tips & Variations

  • Extra protein: Blend cottage cheese completely before mixing
  • Add-ins: Chocolate chips, walnuts, or blueberries
  • Healthier: Use whole wheat flour (½ or all), reduce sugar to ⅓ cup
  • Muffins: Bake at 350°F for 18–22 minutes
